Quick & Easy Chicken Marsala Recipe (Maggiano's Inspired)

So for those of you who don't know the story, my husband and I's first date was at Maggiano's Little Italy Italian Restaurant! Fast forward about 2 years and he proposed to me at the very same place! So I guess you could say that anything Maggiano's or Italian is like a little reminder of that first date where we practically fell head over heels for each other, right from the start.

But rather than bore you with my love story, let's just cut to the chase and I'll give you this delicious "Maggiano's Chicken Marsala Copycat Recipe" that my husband and I found!

  • Makes:  4 servings

Ingredients:

1 cup flour
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
¼ cup grated Parmesan cheese
4 skinless, boneless chicken breast halves, pounded lightly to tenderize
2 tablespoons extra-virgin olive oil (about)
1 large Spanish onion, diced
2 tablespoons unsalted butter (divided)
½ pound button mushrooms (whole or sliced)
¼ cup Marsala
1 can (14 ounces) beef broth or veal stock
Salt and pepper to taste
1 well-packed tablespoon freshly chopped basil

Preparation:

In large, shallow bowl, mix flour with garlic powder, salt, pepper and Parmesan. Cover both sides of chicken breasts in the seasoned flour and shake off excess. (I actually grabbed a large freezer Ziplock bag, threw all the ingredients into the bag and tossed the chicken breasts in it until they were all covered in the flour mixture... less mess and one less dish to wash)
In large sauté pan, heat oil about 20 seconds over medium-high heat. Add chicken. Oil should immediately sizzle. Add onion and sauté chicken about 4 minutes per side or until cooked through. Remove chicken from pan and set aside.
To pan with onions, add the 1 tablespoon butter and melt. Add mushrooms and sauté, stirring, about 2 minutes. Take pan off flame and add Marsala, then return to heat and cook until most of the liquid in pan is evaporated.
Add stock and bring to a boil. Reduce to a simmer and let cook 4 to 5 minutes or until sauce thickens enough to coat back of a spoon. Season with salt and pepper. Add basil, then swirl in remaining 1 tablespoon butter; mixing until combined.
Place chicken breasts on individual serving plates and top with sauce.

*This is a great dish to make with spaghetti noodles. When everything is cooked, just throw the chicken on top of your heap of pasta and then top everything with the mushroom sauce! Then you've got your own Maggiano's Italian dinner at home!

The Secret to Success: Struggles and Failures?

This weekend, I learned a very valuable lesson that I felt I had to share with you!

At my coach conference, I had the chance to listen to some super successful people including Tony Horton, the creator of P90X.

I had never known much about his personal story and how he got to where he is today, but I noticed one very common denominator in many people's journey to success-- and that is STRUGGLE!

We all struggle at some point in our lives, but if we learn to use that struggle in order to grow, learn and make positive changes, then that's how we ultimately succeed in this life.

You can either let your struggles define you and hold you back, or you can learn from them and become a better version of yourself by having experienced the tough times in your life... The choice is yours.

What Do Beachbody Coaches Do? How Do They Make Money?

Curious what exactly I do as an online health and fitness coach?

Well here's your chance to get a free little sneak peek into what I do on a daily basis as a coach, how much time it requires, costs and compensation plan details, and all that fun stuff!

If you're hesitant because you are far from your own fitness goals, don't have a lot of time to commit or know very little about health and nutrition, then don't freak, because none of those are requirements to be a coach.

If you honestly have a desire to work on becoming healthier and more active yourself, holding yourself accountable and just helping to pay that forward to the ones you love and care about most while building financial freedom and opportunity to travel and meet some awesome people along the way, then it couldn't hurt to get a peek at what's involved.

Maybe it's for you, maybe it's not. But at least at the end of my 5 day sneak peek, you'll have all your questions answered and be able to make a more informed decision. smile emoticon

If you want to hop in and join us in the free group, just click HERE to request to join! I look forward to seeing ya in there! ;)wink emoticon

5 Tips for Getting Motivated to Workout (when you really don't feel like it)

Who here struggles with finding the motivation to workout regularly? If this sounds like you, I can promise that YOU. ARE. NOT. ALONE!
.
I'm an online health and fitness coach and help people with this problem each and every day... shoot, even I sometimes struggle with motivation, which is why I wanted to share my TOP 5 TIPS for GETTING MOTIVATED to WORKOUT (when you really don't feel like it):
.
So here goes nothing! I'm just going to jump right into my TOP 5 TIPS:
.
1. HAVE A PLAN!
*Now when I say have a plan, I don't just mean plan to workout everyday.  I mean actually have a very specific plan for WHAT workouts you will do on WHICH days of the week as well as know exactly WHEN you will schedule your daily workouts into your busy schedule each day and WHERE you will get them done at.  You may think this is too detailed and not necessary, but I can promise you that if you have a calendar telling you exactly which workouts you will need to do each day and you make this workout a part of your daily routine, then you will be MUCH more likely to stick with it and stay motivated each day!
.
2. HAVE A GOAL TO WORK TOWARDS!
*Working out is something that many people start to do because they wish to reach a certain goal--whether it be a weight loss goal, a goal to get lean and tone up, lose the baby weight after giving birth... you name it!  Everyone is unique and has their own personal goals, but being aware of these goals, writing it down and putting it on display somewhere where you will see it multiple times a day, is going to remind you of WHY you decided to workout regularly in the first time and will help keep you MOTIVATED to reach that goal!  Make sure that your goals are S.M.A.R.T (Specific. Measureable. Attainable. Realistic. Timely.)
.
3. HAVE AN ACCOUNTABILITY PARTNER!
*This is such a great way to stay motivated!  Think about it... if we didn't have a boss holding us accountable to show up for work everyday, we would be much more likely to slack off and skip days when we don't feel like doing the work.  The same goes for working out. You're going to have days where you just aren't feeling it, but having an accountability partner to check in with each day will keep you motivated... especially when they check in with you first and ask if you've gotten your workout in yet.  As a coach, I have found that most people's success with their workout programs, depend on their daily participation in my online support
and accountability groups.  Those who stay accountable are much more likely to see results and therefore even more motivated to stay consistent.
.
4. REWARD YOURSELF!
*We've already talked about setting goals to get motivated, but another great way to STAY motivated is to reward yourself for staying consistent with your daily workouts and hitting those goals!  It doesn't have to be anything crazy... Sometimes I will simply tell myself that if I get my workout in today, I will allow myself to have a glass of wine with dinner. Or those cute workout pants that I saw at Victoria's Secret, are all mine if I hit that weight loss goal by the end of the month. The bigger the goal that you hit, the better the reward! This gives you that motivation to work even harder.
.
5. REMEMBER 'WHY' YOU STARTED:
* One of the first things I ask the ladies in my online support and accountability groups, is WHY did you decide to make this positive change in your life?  WHY is working out and living a healthy lifestyle something that you want or need to do? And I'm not just talking about reiterating those goals... (ie: "because I want to lose 15 pounds").  That's great, but WHY do you want to lose 15 pounds? Do you want to stop feeling insecure when you're with your kids at the swimming pool this summer? Does diabetes run in your family and you want to prevent yourself from having to deal with health issues that you've watched other loved ones struggle with?  Do you want to be a positive role model for your children and set them up for a healthy life from the start? This is the most motivating of them all when you truly find your 'WHY'.  I can just about guarantee that whenever you aren't feeling motivated, THIS will give you that boost
I hope you've found these tips helpful!!! If you have any questions for me or want help getting started on a workout schedule or need to be held accountable, that's what I'm here for, so don't hesitate to shoot me a message or apply for one of my online health & fitness support and accountability groups that I run monthly.
